Maida offers two Kuchen recipes, this apple and a peach.

Calling a cake a kuchen confuses me a bit as I know that kuchen equals cake in the German language. But kuchen in the English language seems to mean a coffee cake made with fruit. Based on Maida’s recipes, this appears to be her definition, as well.

Maybe because I’m not a great fan of apple anything, I was a bit disappointed here. The cake topped with walnuts and raisins, then cinnamon-tossed apples would, however, make a sweet breakfast addition if entertaining for that meal. I have a secret dream of making my one-block from the beach house a bed & breakfast some day, baking for and serving my guests on my wrap-around porch. I’ll definitely keep this on my vision list for that.
