This is a throw-together-quickly dessert that is totally unique. If you love a coffee after dinner or better yet a coffee cocktail or better even yet if its summer or you just don’t want something hot, this will be a dream come true. Oh, one more thing, you must like gelatin.

Imagine the jellied cranberry sauce consistency, but with total Irish coffee flavor. I think it is brilliant and super easy to make. All this a total surprise because I had no idea what to think with “Jelly” in the title. I think conserve or even aspic would have been more apropos. Still, for a coffee and jello lover it is yummy.
